Ratatouille Niçoise Recipe ~
This is an excellent recipe to preserve your abundance of fresh harvested vegetables. This is especially valuable if you get zucchini seeds from me! Ratatouille is traditionally served warm as a low-calorie main course, but may be used as a side dish to accompany your favorite meat dish. This recipe may be halved, doubled, or even more to suit your preserving needs and your amount of harvest. This is the most time-consuming of my 2 Ratatouille recipes, but the end product lasts longer in the freezer or on the pantry shelf.
