Can you change their sizes? I love making things for decorating walls and such, I know it says three but can you make them longer or shorter, etc?

This is possible if you have experience crocheting. You simply add more stitches. You could also use a larger crochet hook and a larger thread - that would create larger fans. Hope this helps!!! Thx!!! :-)
