Here you have my own version recipe for CHILAQUILES ROJOS, which are like enchiladas but made from homemade tortilla chips, cooked in a skillet instead of baking in the oven. If you love enchiladas, you will love this dish. It tastes just like enchiladas, but without all the hassle of making them with so many dishes that you have to wash later. This is all made in one skillet. It is very delicious! This is perfect for breakfast, lunch or dinner.
