Would these be able to be adjusted pretty easily to go higher than an ankle sock?

Yes lauriebrd, all you have to do is not do the edge in picot and continue in the round with established pattern, I would definitely do a k1, p1 ribbing for some sort of ribbing, to keep socks from sliding down.
