You can actually make tea with the whole plant, anything above the ground for the 1st two years. You can harvest the roots in the 3rd year. It will grow in full or partial sun. I have one in full shade, but it does not bloom much. You might want to double check the zone. I know that it can grow far north, but I don't remember if it can grow far south.
