place on dough only, during the first resting period check to make sure the dough has pulled into a ball away from the sides of the pan if not add a 1/8 cup to machine of flour. it should come to a ball as it nears the end of the needing cycle.
Let rise the hour and 20 minutes that your Machine is set to. When done rising on a clean dry counter place a small amount of Olive oil and rub surface of the counter with your hands, Dump the dough out and roll in to a ball. Cut in half the each half again and then each quarter in three. roll each piece of dough out till you form 12 rolls, use the oil on the counter to help you roll the dough NOT FLOUR!

Country Cottage Cheese Biscuit
Ingredients
4 cups all-purpose, unbleached flour, plus extra for your board and cutter
2 tablespoons
1 tablespoons of salt
1 tablespoons sugar
1 teaspoons baking soda
1 and ¾ cold sticks of butter I use unsalted.
1 cup of small curd Cottage Cheese
2/3 cup of Buttermilk or Sour milk
1 Egg beaten and ½ teaspoon of water
In 400 degrees F. Mix flour, baking powder, salt, sugar and Baking Soda into your large mixing bowl, mix until incorporated. Now cut your butter into small cubes with your knife and place into the bowl. Cut the butter with dry mixture in a downward twisting motion until you have a texture .that resembles the size of Sunflower Kernels. Those pieces will create a more flaky effect
Take the Cottage cheese and Buttermilk and mix together
Create a well in the center of your bowl of dry ingredients. Pour the Cottage Cheese mixture into the center of the bowl. Using your hands (this will get messy), incorporate all the ingredients the dough might seem to wet and sticky I assure you it will firm up.. Now put a small amount of flour on a flat surface and continue to bring the dough together, do not need the dough or overwork it. Use some of that extra flour. roll out and flatten the dough so it's about the height of your flattened hand. Using your biscuit cutter, cut out 12 Biscuits, reworking the dough if need be. Place a finger if you have small hands next to your first Biscuit that's the space needed between biscuits. Brush the tops of the Biscuits with the egg wash by using a pastry brush. Place the biscuits into the oven and bake until golden brown, 15 min.. Remove the biscuits from oven, These biscuits are great for breakfast with eggs and bacon, or alone as a snack. The Cottage cheese when baked in to the Biscuit taste like melted butter and for an added twist after Biscuits come out of the oven you can brush the Biscuits with Bacon Fat on the top just a little YUM!

Here is the Strawberry Apple Tart Recipe. Try it it's easy and delicious.

Strawberry Apple Butter Tart

1--Pr-made Pie Crust Pillsbury
flour for dusting board.
One 14 to 16 in ceramic Pizza pan
½ pint of Strawberry Apple Butter
6 large sweet crispy apples
½ cup Sugar ( The large grains TURBO)
½ teaspoon of salt
¾ stick of butter

Roll out the pie dough till its thin but not to thin that it will rip when you lift it with the a rolling pin. Use the flour to dust the board before you roll out the Dough.
I like using the ceramic pizza pan but if you don't have one then it's OK to use a metal pan.
Roll sides up about a half inch like you would when sealing an apple pie.

Take the ½ pint of Strawberry Apple Butter and spread it evenly on top of the Pie dough from center to sides.

Peal, core and slice apples like rings (thinly) lay them in row's starting with the middle row, start at the top down to the bottom then out to the sides OR start in middle and do a circular effect working out to the sides. Don't work outwards to the center because it will become to heavy in the middle and not bake right.
Take the sugar and sprinkle over the top make sure you get the edges of the dough we want them to get dark and caramely

sprinkle the salt over top then cut the cold butter up in small cubes and dot the top of the tart with it,

Place tart in a 400 degree oven for 25 minutes to 30 or till deep golden brown
and edges are darker then center (Not Black)
Take out of the oven and let cool for about ten minutes cut and serve warm!

Strawberry Apple Butter Tart

I have two very tasty recipe's for Apple Butter
One recipe calls for fresh Apple's and
six hours of cooking slowly on top of the stove.
The other is a crock-pot version
using White House Strawberry Apple Sauce.
Both Recipe's are my own version of Apple butter
For this recipe we will use the Crock-Pot version
The ingredient’s are listed below.

3- 24 oz jars of White House Strawberry Apple Sauce
½ cup of Lemon Juice
3-cups of Light Brown Sugar
2 cups of Dark Brown Sugar
1 cup of Cranberry Juice
½ cup of Apple-Cider vinegar
1 teaspoon of Ground Ginger
1 Tablespoon of Cinnamon
½ teaspoon of Ground Cloves
Liquids can be added during the eight hours of cooking- Water, Apple Juice, Strawberry Apple Juice! The Apple butter may take longer then eight hours depending on the temp of your Crock-Pot

Place in to a VERY large Crock-Pot all of the ingredients listed above
It does not have to be in this order just dump it in. liquids first then spice’s, Stir well blending all the ingredients together. Place this in to the crock pot and put the lid on it for the first six hours.
Because your Apple Butter contains sugar and it might burn and stick to the crock pot, you will want to Start cooking this in the morning as soon as you wake up so you can stir often and prevent it from burning.
The Apple Butter will thicken to a point that you will be tempted to add water if that happens and its been over 8 hours in the crock pot cooking on LOW/MEDIUM setting do not add anymore Liquid's we want this to be thick. Prepare Jars for canning if your new to canning Here is a helpful web sight this should make about 6 to eight pint size jars.

Soon to follow this post will be the Strawberry Apple Tart!
