Daikon is a root vegetable said to have originated in the Mediterranean and brought to China for cultivation around 500 B.C. The word Daikon actually comes from two Japanese words: dai (meaning large) and kon (meaning root). These can be planted in early spring for use in salads, or in late summer to use as a storage vegetable over winter. They do not grow well in the heat of middle summer, but do not fret if a few go to flower. The seed pods are also an incredibly tasty vegetable in itself. I prefer the young seed pods to the radish. They make excellent dipping & snacking veggies. 60-70 days
