Bunching onions (Allium cepa), or green onions, produce long, edible leaf stalks instead of bulbs. Most bunching onions grow from the same seed as regular bulbing onions, the difference is in planting and harvesting. Onion bulblets, usually called sets, aren't true seeds; rather, they are small onion bulbs that can quickly produce bunching onions. Each set grows a single plant, but each plant produces multiple leaf stalks. Plant sets in spring after the last frost or in fall eight weeks before the first frost to grow bunching onions, because warm weather causes the plants to produce large bulbs.
