Amaranth is a healthy grain and leaf vegetable that has been eaten all over the world for many centuries. The seeds/grain were a staple diet of the Aztecs and the leaves are eaten all over Asia. It can be eaten raw as a delicious substitute for salad greens. It loves the heat so by the time the cool crops have bolted, you will have yummy amaranth leaves instead. There are many other ways to prepare this vegetable such as combining it with spaghetti sauce. The seeds can also popped like popcorn,sprouted (like bean sprouts), made into risotto, porridge, bread, pancakes, etc. Some health benefits of red leaf amaranth include: it has more magnesium, iron, calcium, and lysine(amino acid) when compared to other grains. Amaranth seeds have high levels of potassium, zinc, vitamin E, vitamin B, and 20% protein. It has more protein than soybeans, milk, and even whole wheat. It is a super vegetable with 3 times more calcium and 3 times more niacin(vitamin B3) than spinach. It also has 3 times the amount of fiber in wheat. It's completely gluten free.
Amaranth loves rich soil and it can tolerate drought and heat better than other leafy greens. It will not do well in poorly aerated clay soils (add compost and other organic matter to loosen up clay soils).
