Do these grow similar to potatoes...you stick them in the ground and they grow the tops and more roots to harvest? Or more like onions, you plant a little one to grow a big one?

These are more like potatoes, you plant the tubers in the ground and the single tuber would grow the plant above the ground and a bunch of tubers right under the stem of the plant. The roots don't spread though.

Are they pretty cold tolerant? How long do they need to grow and produce. We are close to halfway thru our growing season. I would be harvesting these mid-september probably.

It would be ideal to grow this in a pot and bring it indoors near a sunny window during Winter. It takes around 8-10 months to produce mature tubers which can be dried and kept for a long time. If you plant them now, you'll harvest the tubers anywhere from February to April. These are very easy to grow. Give them as much Sun as you can. This plant is very much similar to ginger.

It would well in a pot 12 inches wide and minimum 12 inches deep. These are excellent as potted plants. Once they are ready to be harvested the leaves will turn brown and the plant will die. That's the sign to dig it up.
