So literally every time I click bid it tells me I've been outbid by someone else. I've tried 6 times - maybe I'm just new to this but why is that happening?

Because someone has placed a larger bid that will keep outbidding you until you go over their highest bid. But no matter what they bid, it will only charge them up to what some one bids against them until it reaches their limit, then it will show you as the highest bidder after that.
