How do you cook them?

I cut them in half, pull out the seeds. place them in a roasting pan, open face down in about a half inch of water. roast at 375° until tender (usually about 30-45 minutes). mash with butter and brown sugar or maple syrup, or I love them with just salt and pepper. the taste is superb, like a slightly richer butternut. I eat the skin too. all recipes.com is a great resource. these squash are also good for stuffing.
