INDOOR SEEDING/TRANSPLANTING:
Sow indoors in winter one to two months prior to spring. Plant the seeds no more than ¼” deep in lightweight, seed-starting potting soil. Germinates at room temperature in 40-60 days. Add bottom heat for faster germination. Grow seedlings at 75°F (24°C). Reduce water and temperature for a week before transplanting to harden seedlings. When the weather is frost-free, transplant outdoors in mild climates or add winter protection. You can keep pomegranates potted and bring indoors for the winter.
HARVEST:
Pomegranates stop ripening as soon as you pick them, but if you leave them on the tree until they over-ripen, they will split and lose their flavor. Fully grown pomegranates will measure between 2 and 5 inches across. Tap the fruit with your finger and listen for the metallic sound of ripe pomegranates. Clip the thick stem off at the base of the fruit to harvest.
STORAGE:
Pomegranate keeping quality is similar to that of apples. They should be kept in a cool, dry, well-ventilated place, out of direct sunlight. Whole fruit can be refrigerated and will keep as long as 2 months. Fresh seeds or juice will keep in the refrigerator for up to 5 days. Pomegranate arils can be frozen for later use.
