The listing, Heirloom Chinese Spinach Amaranth Seeds has ended.

DESCRIPTION: Originating in South and Southeast Asia, Amaranth greens are now grown and eaten through much of the world. Amaranth leaves and stems are extremely nutritious delivering protein, iron and calcium, as well as vitamins A and C. The greens are prepared similar to spinach, but the leaves are not as fragile so it accepts rougher handling and longer cooking times. Lacking tartness it adds great flavor and texture to salads and is popular stir-fried with garlic or steamed. When boiled, it exhibits a thickening effect and is thusly used oftentimes in soups and imparts a beautiful red color to the broth. Approx 500 seeds. Grains mature around 110-150 days but greens can be harvested beginning around 40 days.

DIRECT SEEDING:
Direct seed or set young, growing amaranth transplants after danger of frost, in rich soil and full sun. Space 2-3 feet apart. Drought tolerant, but more productive with adequate moisture.

HARVEST:
Harvest young leaves for greens all summer long, young stems are edible too. Start harvesting amaranth greens when the plants are about 8” tall. Pick individual leaves or harvest the tender top, leaving lower leaves to regrow and branch out.

STORAGE:
Use immediately after harvest. If setting in the refrigerator, do not wash them until you are ready to consume; remove excess moisture from the leaves if condensation occurs. Keeps 3-5 days in the fridge.
