I use as potato substitute, and actually cook them almost any way a potato can be cooked...mashed, hash browns, in soup, or cooked with a roast. They are lower in calories, carbs, and starches than potatoes. Although this is a root vegetable the tops are edible as a green. The package I purchased at local farm supply store is too big, so thought I could share with Listia users. U;S. only with Listia rules applied.
