pmraovich, mmm, I clean, the cut them in about 4 hunks and boil till tender. Then slice in half and clean the center out that is white with the seeds, then scoop the veg from the skin. Now, I fixed as a stuffing with pork sausage and bread crumbs, etc.,; also, made a squash custard with one. The Itallians like to stew them with tomatoes and onions. Definitely edible; never heard of moringa! Hope this helps. Also, freezes well. Plants do start fading down in September in the south.
