collards are amazing, I still have plants that Im cutting leaves from that I started last spring, they wintered over nicely and now are getting ready to go to seed. They can be boiled with onion and bacon or I have used them as a wrap around a meat filling and baked them sort of like a stuffed green pepper and also I use them regularly in a fruit and veggie smoothie that is incredibly healthy and that even my 4 year old grandson loves.
