Pavlova is a wonderful and simple dessert consisting of a meringue shell - hard on the outside, chewy on the inside - topped with fruits and cream. Australia and New Zealand still battle over whose national dessert this is. All I can say is that today it's more famous than the ballerina for whom it was named.
