So I'm using a picture of my grandmother's cookbook. This is not where this recipe comes from, but granny was mostly a baker.

But let's talk about the recipe. Whatever you think Calypso Chicken is, this is not it. This is a fusion recipe at its best, combining European flavor sophistication with African boldness. The Caribbean at its best.
