A friend of mine gave me a blue Hubbard Squash from her garden this year, and there are too many seeds for me! I forgot to take a picture before I cut it up, but this is what it looked like. These can grow huge (up to 50 lbs) and are hollow just like other squashes, with lots of seeds. The flesh is yellow, and tastes very good. It makes a perfect substitute for pumpkin in pies and soups, and is wonderful roasted. They also store well in dry places, so they make fun Autumn decorations!
