Sorrel, also called common sorrel or garden sorrel, is a perennial herbaceous plant in the family Polygonaceae. Other names for sorrel include spinach dock and narrow-leaved dock. Sorrel is native to Eurasia and a common plant in grassland habitats. It is often cultivated as a leaf vegetable or herb.

After developing a serious obsession with vegetable gardening, I decided to produce 150 plants of Rumex acetosa, or French sorrel. The evergreen shrub's robust acidity makes it an ideal garden plant. Sorrel is a multi-use plant that is also known as spinach dock or narrow-leaved dock. Research on its many uses as an herb and a vegetable is extensive. The sorrel plant lends a tart lemon flavor to many meals, and I describe the trials and tribulations of cultivating and utilizing it here.

I mimicked the sorrels' natural habitat by digging a trench in my yard, which gave them well-drained soil and some shade.
