the root can be roasted for a coffe or tea replacement and the whole plant can be harvested in the leaf stage (before it sends up a flower stock or creates a larger root) as a raomaine lettuce or head of lettuce replacement, suometimes the leaves can be very bitter and a little hairy, so you have ti be mindful of that or use a really strong salad dressing or mix it with other less bittter salad greens the root itself is very sweet and nutty full of inulin sugars pre and probiotuics and digestiable fibers and keto sugars for diabetics
the flowers are also edible for cakes,scones, salad dressings, vinegars, marinades, wildflower seasalts for cooking, etc
