**I JUST GOT SOME INFO FROM SOMEONE ABOUT THESE & IT'S POSTED BELOW:**
These are considered quite an invasive weed... BUT they were brought to the U.S. years ago as an herb. Everything is edible and one of the healthiest of herbs ever known. Young flowers and leaves can be put into salads. The leaves can be dried and used in herbal teas. The roots are the most valuable. If allowed to mature to 3 years, the roots can be harvested, roasted, and ground to make an herbal tea that tastes like coffee. The whole plant has the ability to rejuvinate the liver, as well as other body organ health.
